One of the best things about living in Florida is that this time of the year, I can walk out my back door and pick one of these!
We have a huge orange tree in the middle of our backyard and for the next 2 months we will be eating oranges everyday. We have hundreds of oranges, we eat lots and give lots away to anyone who will take them and still we usually end up having to throw some away.
All those oranges in my backyard made me really hungry for these delicious cookies. I got this recipe a few years ago from my Aunt Vicki. It really is a crowd pleaser, every time I have brought these cookies somewhere to share, I have had to take a few copies of the recipe because everyone asks for it!
They are not like any cookie I have ever had before. The orange flavor is a bit unexpected but really refreshing. And they are ridiculously easy to make, no baking at all!
To make these cookies you will need:
6oz of orange juice concentrate
the zest of one orange
4 cups powdered sugar
1/2 stick melted butter
1 small bag of coconut flakes (7oz or so)
Put all your vanilla wafers in a big bag and crush them. One of those kitchen mallets would be really handy for this but I don't have one, so my jar of olive oil works just as good.
Pour the crushed wafers in a big mixing bowl
Add your powdered sugar and OJ concentrate.
Melt your butter and pour it in.
Zest your orange and add that to the bowl.
Mix it all together and let it sit on the counter for 15 min.
Form the mix into 1" balls and roll them in the coconut.
Refrigerate for a few hours and then enjoy! So easy and so delicious!
